If you are unable to find baby kale leaves, then just tear two large kale leaves into 3 cm (1¼ inch) pieces.

FISH WITH TOMATO SAUCE

This is a great dish for children who are tasting fish for the first time as the fish is so delicate and sweet tasting and is served with a perfect tomato sauce. You could also serve it with some cooked brown rice, steamed vegies or crispy salad.

SERVES 4

Preparation time 10 minutes

Cooking time 20 minutes

1 red onion, peeled and quartered

1 carrot, cut into 3

1 zucchini (courgette), cut into 3

1 garlic clove

50 g (1¾ oz) butter, chopped

1 tablespoon Stock ‘cube’ of choice (see here)

2 tablespoons Tomato mix (see here)

500 g (1 lb 2 oz) roma (plum) tomatoes, cored and quartered

500 g (1 lb 2 oz) skinless, boneless white fish fillets, such as whiting or bream, cut into 2 cm (¾ inch) pieces

flat-leaf (Italian) parsley leaves, to serve

small basil leaves, to serve
